Since I'm trying to eat less dense raw foods this week, I decided to try raw food chef, Matt Amsden's raw Creamy Cabbage Coleslaw from his uncook book RAWvolution.  The recipe seemed pretty simple with just some basic chopping for the salad and blending of the dressing.  You can find the recipe on page 88 and makes 3-4 servings.

RAWVolution - Matt AmsdenThe ingredients included red and green cabbage, raddishs, and carrots for the salad portion of the coleslaw.  The dressing includes ginger, olive oil, garlic, raw apple cider vinegar, and Nama Shoyu.  Once I had the salad shredded, I started on the dressing.  Seemed like a pretty simple dressing to blend.  First blend all ingredients, except the olive oil, and then slowly drizzle the olive oil until it emulsifies.

Mine didn't emulsify.  What did I do wrong?

I tried pouring it in slowly as directed, but it just didn't emulsify.  I've made homemade mayonnaise before and it worked perfectly, but that was in a food processor and not the Vita-Mix blender.  I wonder if this particular blender was too fast or maybe I should have put it on a really slow speed.  I'll have to experiment with this emulisfication process.

Though the dressing didn't emulsify it still tasted really really good.  I loved it.  It reminded me of a ginger dressing at a restaurant in Dallas, Texas that I just loved and never could find anywhere else.  The flavors are perfect!

I poured the dressing over the salad and mixed well, although it was too much dressing for the salad; probably since it didn't emulsify.  I used the leftover dressing for other tossed salads.

When I dished the coleslaw into a bowl and tasted the flavor combination, I was overjoyed with the flavors and aroma from this wonderful dish.  In fact, I was watching the news when I polished off the coleslaw and sat the bowl down on the serving tray.  I could still smell the aromas of the ginger which made my mouth water.  What a sinfully delicious, guilt-free, raw food dish full of flavor, taste, and left me craving more.
