It's a party in your mouth – full of flavor and textures. You'll be making this raw taco salad for years to come!
For all of you perfectionists, this salad is not about measurements – no measurements! It's really based on taste and your desire to have more or less of your favorite foods to make up your taco salad. Become ONE with your raw foods. Okay – that sounds hokey, but you know what I'm saying.
Get to know what tastes well with each other, what you love, and just mix it up.
Raw Mango Corn Taco Salad
- 1 large tomato
- Couple leaves of basil
- Splash of lemon juice
- Chopped Onion
- Chopped Celery
- Finely chopped Cilantro
- Chopped Mango
- Chopped/diced Tomato or cherry tomotoes
- Fresh Corn
- Chopped Romaine lettuce and/or Whole Lettuce Leaves
Start by first mixing up your dressing in the blender or food processor. A VitaMix Blender is my personal choice and well worth the money. I blew through at least 5 blenders before making buying my VitaMix blender.
Combine the tomato, basil, and lemon juice and blend until creamy and smooth. Set aside.
Next add the remaining ingredients into a large bowl:
Add Chopped Romaine Lettuce
Mix all of the ingredients together.
Now pour the desired amount of dressing onto your salad and mix evenly.
Scoop into Romaine lettuce leaves and add sliced avocado for your Raw Taco Salad.
I made so much of the salad, that covered well in the fridge, and then took to work for lunches for a couple of days. Just don't mix your avocado in with the salad until you actually eat your taco salad or else the avocado will go brown.
Tastes even better the next day with the mango mixed in with the corn and tomatoes. Just a real healthy option for a taco salad and packed full of sweet and juicy flavors. Inspired by Rawfully Organics Raw Macho Taco Salad.
