You are going to just burst when you taste how much flavor is in this sun dried tomato no bean hummus that is completely raw. Talk about a party in your mouth. I made this raw food dip and shared with my neighbor who kept sticking her finger in the bowl with a kiddish delight at how flavorful it was. She then promptly asked for the recipe.
I actually found this recipe from Matt Amsden's book, RAWvolution, called No Bean Hummus. I changed and added a few extra ingredients to jazz it up, not that it needed it, but I love sun dried tomatoes and it sounded good. All ingredients are raw, organic, and vegan that were blendied in my Vita-Mix blender. Enjoy!
- 4 small zucchini, peeled and chopped
- 3/4 cup raw tahini
- 1/4 cup of sun dried tomatoes
- 1/2 cup fresh lemon juice
- 1/4 cup olive oil
- 4 cloves garlic, peeled
- 2.5 teaspoons of sea salt
- 1 teaspoon of ground cumin
Add all ingredients into your blender and blend until smooth and creamy. I use the Vita-Mix blendier, but a food processor may work too. Serve with cucumbers, red bell peppers, tomatoes, celery sticks, flax crackers, or any other variety of fresh raw vegetable.
Next time I might experiment by removing the sun dried tomatoes and using the remaining ingredients as the base of the no bean hummus and then add a red bell pepper with some cilantro, or dill and green bell pepper. There's nothing like clean eating with wholesome foods packed full of nutrition, especially when they are raw, unprocessed, and organic.*Photo courtesy of ilovemypit
