Can you believe it's been 3 weeks already?  Time has just flown by and have lost weight with an easiness that I'm not accustomed to with diets in the past.  I feel so healthy, energized and just loving every day that I continue on this journey towards better health.

While I'm writing this, I'm dehydrating some fruit and banana leather for my trip.  It smells amazing and is still raw since the temperature is set at 110 – 8 degrees below the 118 raw food temperature to retain enzymes.  I can't until it's done and I can taste it.  It was so easy.  I just blended some apples, little bit of water to get the blender moving, bananas, little bit of honey, and cinnamon.  I had to use up the remaining fruits before I left on my trip and what better way to use them then to dehyrdate.

This has been an amazing process to lose weight and get healthy.  Raw food eating has given me so much energy and to be honest – it's been fairly simple.  Preparing foods isn't time consuming or a struggle.  Most dishes can just be ran under some hot water to clean.  Below I've listed some benefits and challenges of raw food eating that will hopefully be helpful to others.

Benefits of raw food eating so far:

  • Eczema in ears and on hands disappeared after 15 years
  • Weight loss of 16 lbs
  • Body fat loss of 3%
  • Increased energy
  • Sleeping through the night
  • Skin is softer
  • Stomach isn't as bloated
  • Nails are growing really fast
  • Easy to prepare foods

Challenges of raw food eating:

  • Learning how to prepare foods
  • Learning what I can eat and not eat with raw food
  • Figuring out which fruits and greens blend well together in green smoothies
  • Wanting some foods heated rather than cold


Overall, I haven't experienced too many challenges – at least not ones that I couldn't overcome.  Learning how to eat and what to eat was the major challenges.  Soak nuts or not soak nuts.  I never even knew you could soak nuts or even why you would want to soak nuts.  If you're reading this and you're interested in eating raw food or just starting out, review 10 Tips for Raw Food Beginners.   I've loved every minute of learning more about eating raw and especially the health benefits of adopting a raw food diet.  I also noticed that my taste buds are changing.  Fruits are sweeter, salt is saltier – and I loved salt when I ate cooked foods.  I'm beginning to crave greens and foods with a higher water content.

This week I'm traveling for the first time since starting a raw food plan and drinking green smoothies.  I'll be traveling to Alaska to see my fiance, so it will be interesting to see how I fair for the first time.  Preparation is key.  During the last couple of weeks, well, since I got my brand new dehydrator – did I tell you how much I love it?  Dehydrating is fun and I discovered you could warm foods in it – slowly of course since you can't heat above 118 degrees without killing the foods enzymes.  So far I've made the following:

  • Kale chips – oh so yummy with a Mexican flair
  • Flax crackers
  • Apple and banana fruit leather
  • Onion bread
  • Fruit and nut bars

These foods will travel well, although these raw foods are more dense than what I would typically eat.  When traveling you're surrounded by quick meals, snacks, and foods that aren't so healthy and definitely aren't raw.  Dehydrating these foods in advance and taking some fruit to snack on will help me to stay committed and focused to eating raw.  Haven't you ever been on a diet and been so hungry with nothing to eat that when you smell food or somebody gives food to you, you're much more willing to accept it – you're so hungry you want that food.  I'm preventing that scenario.

Now, the weigh-in results.  I lost 4 lbs and 0% body fat in the 3rd week of the raw food and green smoothie challenge.  that's a total of 16 lbs and 3% body fat in 3 weeks.  This week I stuck to eating less dense foods than I did in week 2.  I think it shows the difference in how much weight you can lose since I lost 1 lb in week 2, but 4 lbs in week 3.

Daily food intake:
  • 64 ounces of green smoothies which consists of about 4 different fruits, 2-3 cups of greens, water, ice, and sometimes ground flax seeds.
– I divide these up into 4 insulated metal bottles; like the Camelbak water bottles and then drink throughout the day.
-Typically, I’ll drink 2 in the morning, a lunch, then 2 in the afternoon and evening.
-Sometimes I’ll switch it up so a I have a dinner meal and then stagger the green smoothies throughout the day.
  • Snacks and/or meals consist of the following:
-Celery with pico de gallo, or nut cheese, no bean hummus, or just plain Avocado with pepper and lemon or wrapped in a romaine lettuce leaf
-Fruit – grapefruit, apple, tangerine
-Kale chips
-Flax crackers with avocado
-Vegetable sushi with raw nori wraps, avocado, carrot, cucumbers, wasabi, and other great veggies that I have fresh in the refrigerator.
-Avocado salad with romaine lettuce, spiraled cucumber, avocado, and pico de gallo – my personal favorite.
-Spiraled zucchini with sun dried tomato marinara – love this one too.


As you can see, there's plenty to choose from, and mainly I just mix it up.  I make sure I have enough of the vegetables that I love and figure out a way to combine them.  I try not to eat too much more fruit throughout the day since I've already had 4 servings of it, but sometimes I crave something sweet.  If I'm really craving sweet and chocolate, I made the Raw Cacao Superfood Coconut Balls.   These little bite sized wonders are sensational.  It's a party in your mouth full of yummy chocolate and coconut.  Hmmm..

Starting weight:  227 lbs and 47% body fat
Week 1 – Lost 10 lbs and 2% body fat
Week 2 – Lost 1 lb and 1 % body fat
Week 3- Lost 4 lbs and 0% body fat
Current weight:  212 and 44% body fat
