Are you a chocolate lover?
Whether you are a chocolate lover or not – be prepared to be blown away by the chocolate, coconut sweetness from these bite sized raw chocolate macaroons.
The recipe is so simple for such an amazing flavor that comes from these little macaroons.
Matthew Kenney and Sarma Melngailis co-created the uncookbook, Raw Food Real World, with beautifully, inspiring food that is completely raw and full of so much flavor. If you are one of those that are still skeptical about whether raw food can actually taste good, well, you'll be rethinking this statement after this recipe!
Several reasons I really enjoyed this raw dessert is because it's so simple to make, there's only 6 ingredients, and the taste is just so powerful. It's one of those raw desserts where you can feel happy that you're eating a dessert that can still be good for you (in moderation of course).
So let's get started!
Raw Chocolate Macaroons Recipe
- 3 cups dried, unsweetened coconut flakes
- 1.5 cups cocoa powder or 1 cup raw cacoa chocolate
- 1 cup maple syrup
- 1/3 cup coconut butter (also known as coconut oil)
- 1 tablespoon vanilla extract
- 1/2 teaspoon sea salt
Combine all ingredients into one mixing bowl and stir until thoroughly combined.
The recipe shows the macaroons to be scooped with a small ice cream scooper making them a little thick. I scooped them with a tablespoon and made them flatter (to dehydrate faster) and not as wide. My macaroons ended up being about 1.5 times the size of a quarter only because I really just wanted bite sized macaroons. However, you can make these any size you want, but just remember, the thicker you make them, the longer you'll have to dehydrate.
When you determine your size, place the raw macaroons dough onto dehydrator screens and then dehydrate at 115 degrees for 12-24 hours, or until crisp on the outside and chewy on the inside.
I will tell you that there is only one downside to this recipe – you may not have any macaroons left for the next day when you dehydrate. The sweet smell permeates the room and little hands – including yours – will not be able to resist sneaking one out before fully dehydrated.
The recipe also states that if you'd rather have a raw blonde macaroon, than substitute the chocolate powder for equal amounts of fine almond flour.
